Aimé Cougoureux, owner of
Ma Bourgogne 
Aimé Cougoureux likes Beaujolais wines. Unfiltered wines,
unsulphured. « Wines that give you the impression that
you are eating the grape” is how the owner of the Bourgogne
in the Marais explains.
His bistro, Ma Bourgogne, is one of the
bistros of Paris to recommend with the most wine by the glass on
offer. Open bottles are not placed on shelves heated by neon lights.
On the contrary, Aimé Cougoureux takes care to put them in
a cool place, so that each glass of wine gives its best potential.
The love of wine is recognised especially by little gestures like
that.
Twice a year, Aimé Cougoureux leaves for an expedition in
the vineyards. Once in the Bourgogne, another time in the Sancerrois.
Aimé makes a point of satisfying all tastes. The amateurs
of great Bordeaux names, Médoc, Pauillac, Pomerol, de Bourgogne,
Puligny Montrachet or Corton Charlemagne without mentioning Côtes
du Rhône. But in his selection of the week, he uncovers the
small producers who provide you with wonders, wines not over filtered
or sulphured, which avoids putting your head upside down.
For the great wines, Aimé Cougoureux quotes the vineyards
of the Herault next to St Chinian. “These vineyards don’t
produce more than 25 hectolitres to the hectare on old Grenache
and Syrah vines. The result is incredible. Thus, these wines have
nothing to envy of the great Bordeaux. But these bottles, I keep
for the connoisseurs because it’s a great art.”
