Tarte Tatin


It was two sisters, Caroline and Stéphanie Tatin who had a restaurant in the centre of France, who invented at the end of the 19th century, by accident, this famous tart. One of the sisters had forgotten her apple tart in the oven which burnt. She decided to leave the apples now caramelized, and to put the pastry on top so that the apples wouldn’t burn anymore and put it back in the oven. This was a great success! It was the famous culinary critic Curnonsky who in 1926 called it the tart of mistresses Tatin. In the bistro, the Tarte Tatin is often served with fresh cream of a scoop of vanilla ice cream.
