Crêpe Suzette



It was at the café de Paris in Monte Carlo that the crêpe Suzette was invented. The young Prince of Wales to become Edward VII was a regular at the café de Paris. He wanted the pancakes to be prepared in front of him. Each day, the young apprentice cook brought his small petrol stove to cook the pancakes. Accidentally he tipped some champagne into the pancakes which immediately caught fire. Astonished, the prince asked what was happening. The apprentice cook replied that it was a new recipe called “the prince of Wales pancake”. But the latter proposed that it be called “Crêpe Suzette” after the young Parisian girl who was accompanying him. In fact, these pancakes are today served flavoured with mandarin and flamed with Grand Marnier.
