Aligot

 


This dish is often served in bistros and restaurants owned by Auvergnats because it’s a dish that comes from the Aveyron and Cantal regions. It’s mashed potatoes with pieces of cheese, “tome” from Lagiole in the Aubrac region of the Aveyron. Aligot is generally served with sausage.
