Floating island (Ile flottante)


This dessert is called “island” because the whipped egg whites should float on the sea, which is the custard. The other name for ile flottante is “oeufs à la neige” (snow eggs).
It consists of whites of eggs whipped until very firm. These snow eggs are then placed on a plate on top of custard (mixture of eggs, egg yolks, sugar and vanilla).
