Tender country ham, generous portions of aligot
(mashed potatoes, garlic and cheese), stuffed cabbage, thickly-cut
steak of Salers beef, and lamb from Lozère have made this
restaurant, which was founded by Josef Petrucci, a success for
nearly half a century. At The Ambassade, you can eat with relish all
the various dishes from Auvergne: salade de lentilles vertes du
Puy (green lentil salad with bacon), pièce de boeuf de Salers au vin rouge de genièvre
(pan-fried thickly-cut steak of beef with juniper berry red wine
sauce), potée de porc fermier (farm pork hotpot) and pot-au-feu
d’agneau de Lozère (lamb stew). On the menu you can also discover original regional wines such as Marcillac Domaine Laurens 2002 – a red wine with deep purple colour and a spicy blackcurrant smell. The Marcillac is a rich fruity wine balanced by soft tannins. This wine has body with a persisting and perfumed final note and it is offered at an affordable price.
